Each Pépin cuvée is made from organically grown vines, harvested by hand, with no additions, using only indigenous yeasts and no added sulphites.
The grapes come from different regions of France (primarily Alsace) and the assemblages change each time.
Riesling, Pinot Blanc and Auxerrois are floral and fruity, with tense acidity and a long finish.
